Add salmon, skin side up. Cover and refrigerate for 30 minutes. Combine all the relish ingredients in a medium saucepan. Cook over a medium heat until the mixture boils, stirring occasionally. Reduce heat and simmer for 6 to 8 minutes or until the onion is tender and the mixture thickens. Allow to cool. Heat grill to medium. Place salmon skin side down and grill for 20 to 30 minutes or until the salmon is opaque and flakes easily with fork. Cut the salmon into 4 pieces. Serve with relish. Rate
